Grilled Veggie Burgers with Lemon and Rosemary

What do you need:

  • 1 lemon, grated
  • 1/2 onion, finely chopped
  • 4 garlic cloves, finely minced
  • 2 cups cannellini beans, drained and mashed
  • 2 cups artichoke hearts, drained and chopped
  • 1 cup quick oats
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

In a large bowl, combine lemon zest, garlic, crushed cannellini beans, artichoke, rosemary, salt, and pepper. Sauté the onion (without oil) in a pan until golden and add to the mixture of beans and artichokes. In a blender, crush the oats a few times, then add them to the mixture as well. With clean hands, mix all ingredients well and form into patties. Arrange on a parchment lined tray, cover and refrigerate for 1 hour. When ready, cook on a preheated grill over medium high heat until cooked through. Serve with your choice of buns and seasonings.

Grilled Vegetable Salad With Green Vegetables

What do you need:

  • 2 zucchini, cut into strips (1/4-inch thick)
  • 1 bunch of asparagus, without stems
  • 1 bunch broccoli, stems trimmed
  • 2 cups of fresh spinach
  • 3 tablespoons olive oil, divided
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon diced shallots
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt to taste

Toss the zucchini, asparagus, and broccolini in 1 tablespoon of the olive oil and season with salt. Cook on a preheated grill (on a tray) over medium high heat, turning once, until grill marks appear or when fully cooked. Arrange the roasted vegetables in a serving bowl along with the spinach, mint, shallots, Dijon mustard, apple cider vinegar, and remaining olive oil. Mix everything together. Serve immediately.

Creamy Roasted Corn with Herbs and Spices

What do you need:

  • 8 ears of corn, shelled
  • 1 clove garlic
  • 1/2 cup cilantro, chopped (divided)
  • 1/2 cup raw cashews, soaked overnight
  • 1/2 cup of water
  • 1/4 cup fresh lemon juice
  • 1/4 cup nutritional yeast
  • 1 tablespoon Dijon mustard
  • 1 teaspoon chili powder
  • 1/4 teaspoon black pepper

To make the creamy sauce, combine the garlic, 1/4 cup cilantro, cashews, water, lime juice, yeast, Dijon mustard, and black pepper in a blender or food processor. Blend until the mixture is smooth and creamy. Grill the corn on a preheated grill over medium high heat for about 10 minutes or until cooked through. To serve, place the grilled corn on a plate and drizzle the creamy sauce all over. Top with the remaining coriander and sprinkle with black pepper.
