Plan a dinner that can be cooked on the grill, then in the late afternoon head to the local lake for a swim and a great lakeside grill dinner. We have chosen some easy recipes. You provide the family and transportation and we are almost there. I hope you have a lake nearby, a beach or a pond. If not, your local park should do the trick or you can just head to your backyard for some family fun together. If you don’t have a lake you can swim in, you can still have water-based family fun. Just pull out the giant squirt guns or turn on the sprinkler and let the kids enjoy. We have a dozen squirt guns in our house that are instantly entertaining for kids ages 2-20. We have a rule that you can only throw water at someone who has a gun. We made the rule to prevent kids from spraying cranky moms, but it was actually a great strategy for older kids, because if you’re cornered, you can always drop your squirt gun and it’s great to sneak up on other armed people. .

Grilled Chicken with Avocado Lime Salsa
Quick, easy and delicious.
for 4 people
Ingredients
1 1/2 lb chicken cutlets or chicken breasts, boneless and skinless, cut in half horizontally
2 tablespoons of olive oil
salt and pepper to taste
2 avocados, pitted and diced
2 tablespoons lime juice
1/2 cup red onion, cut into 1/4-inch cubes
3 tablespoons coriander
1/2 jalapeƱo pepper, seeded and minced (or to taste)
Instructions
Preheat grill to medium high heat. Drizzle chicken with olive oil on both sides and season generously with salt and pepper.
Prepare the sauce by combining the remaining ingredients.
Grill breasts for 2 to 3 minutes per side, or until cooked through. Serve covered with sauce.
Grilled rosemary beef
This easy weeknight meal is also good enough for company. Enjoy!

Ingredients
3lb Gold Round London Broil Eye
olive oil
1/4 cup balsamic vinegar
salt and pepper
5 rosemary sprigs, cleaned and finely chopped
1 tablespoon flat leaf parsley, chopped
4 teaspoons garlic – minced
Instructions
Heat the grill. Coat meat with oil and vinegar; then, sprinkle salt and pepper over it. Finally add the rosemary. Grill beef to desired doneness.
Let the meat rest for a few minutes after removing it from the grill. Cut it into thin slices and drizzle with a little balsamic vinegar. Sprinkle with parsley and a little more rosemary, if desired.
Campfire Roasted Garlic Bread
Everyone loves warm, soft and buttery garlic bread.

Ingredients
1 loaf of French bread
1/4 cup butter
2 teaspoons garlic powder
Instructions
Divide bread in half horizontally, top with butter and garlic powder. Replace the lid and wrap tightly in aluminum foil. Grill, turning periodically, until heated through.
